WOW! I have been on a blogging hiatus. It is time to try to start this back up again so here goes…
My weekly dinner menu for 2/11-2/16 includes:
(I am not including Sunday because we get together with our small group and have dinner)
Monday- Parmesan Tilapia with roasted asparagus and tomatoes (See recipe below)
Tuesday- Turkey Tacos
Wednesday- Barber’s Cordon Bleu Stuffed Chicken (I love these! They are so easy to make and are good for nights when I don’t really feel like cooking!)
Friday- Potatoes and Kielbasa (recipe here)
Saturday-Layered Chicken Hot Dish (recipe here)
Parmesan Tilapia (recipe adapted from this one on Food.com)
4 tilapia filets
2 tbsp lemon juice
1/2 c grated parmesan cheese
5 tbsp mayonnaise
3 tbsp chopped green onions
1/4 tsp Old Bay Seasoning (or season salt)
1/4 tsp dried basil
black pepper to taste
Preheat oven to 350-degrees. Grease and baking sheet and lay filets in a single layer. Generously brush the filets with lemon juice and bake for 15-20 minutes or until the fish is flaky.
Meanwhile, combine mayo, parmesan cheese, green onions and seasonings in a bowl.
Remove fish from oven and spread the cheese mixture on top of each filet. Turn on the broiler and broil the fish for 3 to 4 minutes or until cheese is browned and bubbly.
For the asparagus and tomatoes, I used 1-lb of asparagus and 10 grape tomatoes. I placed them on a shallow roasting pan and tossed them with olive oil, 1/2 tsp of Old Bay Seasoning, 1/2 tbsp lemon juice, and a little pepper and put them in the oven at the same time as the fish. They are ready when the tomatoes start to burst.
