As the parents of a toddler, we don’t go out to eat much. About once a month, my mother comes to visit and we have “date night”, but other than that, we pretty much just eat at home. Every once in a while we venture out to a restaurant with the munchkin, but it is usually to a Mexican restaurant. You know, chips and salsa when you sit down and food out in less than 10 minutes…that kind of place. I am ashamed to say, I have stashed the iPad in my overly large purse/diaper bag a few times. Just. In. Case.
Any who, all of this whining about not going out to eat does have a point. We have a favorite pizza place that is about an hour away from our house that we LOVE to go to, but last time we took our little Mister with us, the food took an extremely long time and we all had a few meltdowns before we finally got to eat. So, needless to say, it has been a while since we have gone back. Besides having awesome pizzas, they also have a great beer selection, amazing pretzels (made from the pizza dough) and the BEST bruschetta I have ever have. A couple of nights ago, I decided to try to recreate that delicious bruschetta for the hubbsters and I to enjoy and it came out pretty good. It was a weeknight so I kept the recipe really simple, but you could totally freshen it up with fresh tomatoes instead of canned if you have the time.
So, you will need some diced tomatoes with garlic, basil, and oregano, bread, feta cheese, fresh basil, and balsamic glaze. You can try to make the glaze yourself by just reducing the balsamic vinegar, but the last time I tried that, the whole house wreaked and none of us could breathe. It was not fun.
Drain the can of tomatoes and mix in a bowl with the basil.
Slice the bread (I used some I had from the farmer’s market, but you could definitely use french bread or a baguette) into small “finger food” sized pieces and place on a cookie sheet. Brush each slice with olive oil and place into the oven under the broiler. Broil until lightly toasted.
Put the bread on a serving platter. Top each slice with the tomato mixture and feta cheese. Then drizzle with the balsamic glaze and enjoy!
The saltiness from the cheese and the sweetness from the glaze go so well with the tomato and basil mixture. The crunchy bread is a perfect vessel for this yumminess!
