I was born and raised in the south and grew up on good southern cooking. My hubby was born and raised in the northwest and hadn’t had some of the southern staples like pecan pie, sweet potato casserole, and well-cooked grits. (He had them for the first time in basic training and hated them.) Now, those three things are among some of his favorites!
One of our local restaurants makes a delicious shrimp and gouda cheese grits dish that he loves and I wanted to sort of recreate that at home for him. I decided to make the grits with cheddar cheese, but this recipe could totally be altered using gouda or even cream cheese. I like the great flavor that comes from the sharp cheddar cheese though.
This recipe is really simple and you can cook the shrimp two different ways, you can skewer and grill them (the way Mr. Moore likes them) or you can saute them in a pan. Whichever way you do it, they are sure to be delicious!
Sorry about that lack of preparation photos, I was preoccupied while cooking this!
