Weekly Menu {8/26-9/1}

New Menu

Happy Monday! I hope you all had a wonderful weekend. Last week we were in Seattle for my father-in-law’s 60th birthday! I hope you enjoyed my recipe recap last Monday, but now we are back to the weekly menu planning and I am pretty excited for some of the new recipes I am trying this week. I am now marking my new recipes with ** so that you will know which they are. I will be trying to keep up with doing a monthly recipe recap letting you all know which recipes were keepers and which we decided to “toss”.

Monday– **Spinach Artichoke Chicken Biscuits from Inside BruCrew Life

Tuesday- Beef Tacos; I am making homemade tortillas for the first time EVER from this recipe from Mom on Timeout.

Wednesday- Crock pot lasagna. (I know, I know) We have had this three times now and I have finally perfected my own version of it. I will post the recipe soon.

Thursday- Leftovers

Friday- Grilled Chicken Fajitas (using my homemade tortillas again)

Saturday- **One Pot Chicken Risotto from Sweet C’s Designs

Sunday- **Cheeseburger Casserole from Skinny Taste

Weekly Menu {8/12-8/16}

New Menu

Happy Monday! It is going to be a short week because we are off to Seattle on Friday!

MondayPioneer Woman’s Philly Cheesesteak Sandwiches; I saw these on her blog last week and I HAD to have them! We have leftover bread from French bread pizzas last night so, it was perfect.

Tuesday- Turkey tacos.

Wednesday- Crock pot lasagna; I made this last Wednesday and I was pleasantly surprised at how it turned out. I made it just like the recipe said, but it just didn’t have enough flavor for my hubby and I so, I am testing out some ideas I have to make it better. I will share the recipe once I have it “perfected.”

Thursday- Frozen, Stuffed Chicken. Publix had a B1G1 sale on the frozen, stuffed chicken breasts last week. I will cook them and also make some rice or something on the side.

Friday- On our way to Seattle! Wish us luck…we haven’t flown with Peanut since he was almost 1-year-old and it wasn’t  fun at all!

Weekly Menu {8/5-8/11}

New Menu

Happy Monday! I hope you all had a wonderful weekend. Last week was our last small group meeting for this semester so, I guess I am back to cooking dinner on Sunday nights again! A couple of weeks ago, Publix had a sale on chicken breasts, buy one get one free, so I stocked up on that and still have a TON of it in the freezer. So, you know what that means….chicken EVERY night (well almost). Lucky for me, the Food Network magazine this month had an insert called “50 Chicken Dinners”!

Monday– Chicken fried rice. I am a Asian food lover, but my hubby isn’t so I hope he can tolerate this! This recipe is from the Food Network Magazine insert.

Tuesday- Chicken tacos. I still have some chicken taco meat leftover in the freezer that I will use to make this. I also make a sauce using this recipe from One Krieger Chick. It is awesome and I highly recommend you try it!

Wednesday- Crock pot lasagna. I have had this recipe pinned for ages, but I am finally going to take a chance and try it! I will let you know how it goes.

Thursday- Chicken and gravy with mashed potatoes. This recipe is from the Food Network Magazine insert also.

Friday- Leftovers…mommy gets a break!

Saturday- BBQ chicken. About three weeks ago, I put some chicken breasts in a Ziploc with some BBQ sauce and stuck it in the freezer. This is my first time making something like this so I hope it turns out ok.

Sunday- French bread prosciutto pizza. I got my inspiration for this from the Pioneer Woman’s blog post this weekend. (I just love her recipes) For this one, I will use  prosciutto (which is B1G1 at Publix this week), an olive oil base, sliced Roma tomatoes, and goat cheese. Not sure how it will turn out, but I have high hopes for it!

Weekly Menu {7/29-8/4}

New Menu

Happy Monday everyone! We had a crazy week in the Moore house last week so I didn’t post anything at all. This week, we are coming to the end of the month and we only have $35 left for groceries! We will be eating a lot of cheap easy food this week.

Monday– We will not have our little one (he is at Nana’s house) so we will fend for ourselves.

Tuesday- Chicken tacos. I made the crock pot chicken taco meat last week and froze the leftovers so, all I need to get are the toppings and the shells.

Wednesday- Creamy Sausage and Tomato Pasta from Six Sister’s Stuff. I have made this before and it is really good! I already cooked the sausage this weekend to save a step.

Thursday- Breakfast for dinner. Probably pancakes or waffles.

Friday- Turkey croissants. I usually just take a can of crescent rolls, some sliced turkey, and cheese and roll it all up and bake it. They are cheap, simple, and yummy.

Saturday- Chicken Strips with Mac and Cheese. Last week, chicken was on sale at Publix B1G1 so I bought two big 4-lb packages and divided it to freeze.

Sunday- Small group: Turkey and Swiss Sliders. This recipe from Chef in Training is what I will be using, but my hubby isn’t a big ham fan so I will substitute it for turkey (which is on sale B1G1 at Publix this week).

Weekly Menu {7/15-7/21}

New Menu

Happy Monday everyone! I am a little behind on making my menu this week. I have been down and out with a stomach bug since Friday, but I am all better today. We are eating a few of the meals from last week that I didn’t cook due to my illness.

MondayBurgers and French Fries (from last week)

Tuesday- Turkey Tacos

Wednesday- Crock Pot Meatballs with spaghetti and  a side salad

Thursday- Leftovers

Friday- Grilled Chicken with mac and cheese

Saturday- Chili Dogs

Sunday- Small group: Black-Eyed Pea Dip from Pioneer Woman (I didn’t go to small group last week, so I will try to make this again)

Dinner Menu 2/18-2/23

This weeks dinner menu includes a favorite and a couple new recipes.

Monday- Homemade pizza (Publix has their pizza dough on sale B1G1)

Tuesday- Easy Chicken Crockpot Tacos; this is a recipe I found on Pinterest a long time ago and it is great!, but I cannot find the original post for it. Here is what I have written down though! Here is the original recipe. (Please note that the original recipe was not made in a crockpot. You can definitely make it the original way, but if I can make something delicious in my crockpot and not have to “cook” it myself, I will! So, if you want to cook it in the crockpot, just follow the directions below!)

3 chicken breasts
1 pack ranch dressing mix
1 pack taco seasoning mix
1 can chicken broth

Put all the ingredients in the crock pot and cook for 6 hours on high or 8 hours on low. Remove and shred. Put into soft or hard taco shells and top with your favorite taco toppings. We like guacamole, sour cream, cheese, taco sauce, and lettuce!

Wednesday- Crockpot Jambalaya; this is a new recipe found here

Thursday- French Dip Crescents; another new one found here

Friday- Chicken Taquitos; I like to make these the same week that I make the chicken tacos and I use the leftover chicken from the tacos. This recipe was adapted from this one.

4c shredded cooked chicken
12 tortillas (I use flour)
2 c shredded cheese
4 oz cream cheese
2 tbsp butter
1/3c milk
1/3c enchilada sauce
2 tbsp oil

Preheat oven to 425-degrees.
Melt butter in a saucepan, add cream cheese and stir until cheese is melted. Add milk and simmer 5-8 minutes. Stir in the enchilada sauce.
Mix chicken in the cheese sauce.
Fill tortilla with 1/3c chicken and 2 tbsp shredded cheese. Roll tortilla tightly and place on a oiled baking sheet. Brush the tops and sides of the taquito with oil and bake 15 minutes turning every 5 minutes. Serve with salsa and/or guacamole.
