Weekly Dinner Menu: 6/6-6/9

New Menu

Good morning and happy Monday! I hope everyone had a fantastic week. We have company this week until Thursday so there are a couple of days I am leaving blank. I want to start out by telling you that I did not make the Mexican dish that I was going to make on Sunday last week because my hubby and I loved Oh Sweet Basil’s Rib recipe so much we decided to make it again! It really is simple and delicious. I suggest you make it A.S.A.P.!

Monday- Hamburgers and Oven Fries; I am using a recipe I found on Pinterest that claims to be the best baked oven fries. We shall see!

Tuesday- Grilled Chicken Tacos; I am marinating the chicken in 2 tbsp of olive oil and 1 tbsp taco seasoning overnight and then grilling it. I have also been using One Krieger Chick’s recipe for cilantro lime tacos. The only alteration I make is that I mix the lime, cilantro, onion, and a dash of taco seasoning in 1.5 cups of sour cream to make a sauce for the tacos. My husband really liked it that way!

Wednesday- Usually this is my crock pot dinner night, but since it is Gram and Pop’s last night in town, I am leaving it blank.

Thursday- Cheesy Enchilada Casserole; this is the one I didn’t make last week.

Friday-  Leftovers

Saturday- Pizzadillas; I am going to make these with pepperoni, green pepper, and onion.

Sunday- Church Small Group

Weekly Dinner Menu: 5/27-6/2



Happy Memorial Day everyone! I hope you are all out enjoying some quality time with your families and friends. Here is our menu for this week! Gram and Pop are coming from Seattle for a visit so we are all VERY EXCITED!

Monday- Oh Sweet Basil’s BBQ Ribs; This  is our first time making ribs and we are a little nervous, but her recipe seems pretty simple.

Tuesday- Ground Beef Tacos

Wednesday- Slow Cooker Gyros from Six Sister’s Stuff with tzatziki sauce.

Thursday- Lemon Basil Pasta, another Oh Sweet Basil creation. I am making this with the frozen chicken like she did instead of cooing my own because Gram and Pop get here this night and I want to be able to spend lots of time with them.

Friday-  Grilled Buxom Chicken Breast; my SIL told me about this recipe and her and my BIL swear by this website for all things grilled!

Saturday- Leftovers

Sunday- Cheesy Enchilada Casserole from Six Sister’s Stuff (I love their recipes too)

I promise to let you guys know how all of these new recipes turn out!

Weekly Dinner Menu: 5/20-5/26

New Menu

Good Monday morning everyone! I am so sorry about the lack of a dinner menu last week, but after being out-of-town until Tuesday and playing catch up on all my house work that needs to be done, I was a bit overwhelmed. Not to worry, I am back with a wonderful weekly dinner menu this week that I am excited about! There are a few new recipes that I am trying and I am cooking almost everything on the grill. I love cooking on the grill!

Also, today is my sweet pup Emma Lou’s birthday! She is my crazy, sweet little cuddle puppy and she is now 7 years old. Here is a little montage of Emma through the years…

Monday- Hamburgers on the grill.

Tuesday- Cilantro Lime Chicken Tacos from One Krieger Chick. These sound amazing! I am going to marinate the chicken in taco seasoning and olive oil before grilling it. I am grilling extra chicken to freeze and have on hand.

Wednesday- Going to Nana’s house!

Thursday- Still at Nana’s house!

Friday-  Southwest Chopped Chicken Salad: I am using the extra grilled chicken from Tuesday night’s tacos for the salad.

Saturday- Steak Fajita Rice Bowls: This recipe is a culmination of two recipes I found. One, on Oh Sweet Basil and one on Pioneer Woman. I will marinate the steak and veggies like the Pioneer Woman did for her fajitas and put the dinner together like it was done on Oh Sweet Basil. This sounds like a healthier alternative to using a tortilla (especially since I am not a fan of corn tortillas which are better for you).

Sunday- Crock Pot Spaghetti and Meatballs: This is a new recipe for me, but I am excited about making the meatballs in the crock pot as opposed to baking or sauteing them. It should save me some time.

I am excited about this weeks menu and I will do a recap sometime next week to let you know how the new recipes turned out!

Weekly Dinner Menu: 5/6-5/11


Good Monday to you all! I am trying to keep my menu simple this week because my mom is coming in town and the hubby and I are getting ready to go out-of-town for our anniversary! There is only one new recipe on the menu, the mini deep dish pizzas. The rest are tried and true recipes that I know we like and aren’t too difficult. I am happy to be making the shrimp and grits as an early Mother’s day dinner for my mom. I am also making this Samoas Poke Cake for her because she LOVES coconut! I will be sure to let you guys know how it turns out! I hope you all have a great week!

Monday- Roast Beef (French Dip) Crescents; I make the recipe omitting the Au jus and I use the horseradish sauce as a dip instead of putting it on the actual sandwich because it is too spicy for the little one.

Tuesday- Chicken Tacos; I am using leftover Cafe Rio Chicken from last week. (I also used this chicken to make the Pioneer Woman’s Chicken Tortilla Soup for my small group on Sunday)

Wednesday- Crock Pot Chicken and Mashed Potatoes Printable Crock Pot Chicken Recipe

Thursday- Mini Deep Dish Pizzas found on Dashing Dish

Friday-  Pesto Ranch Chicken with Pasta

Saturday- Shrimp and Grits

Happy Monday! Here is the menu for this week. We have a few things going on so this one is only Monday through Friday.

Monday- Balsamic Chicken and Peppers from Your Home Based Mom (this is a lot like the sausage and pepper recipe I make)

Tuesday- Chicken Tacos- I am using a new crock pot recipe for the chicken. It is Cafe Rio Chicken from Chef in Training

Wednesday- Slow Cooker Creamy Ranch Pork Chops and Potatoes from Taste and Tell Blog- I am excited to try this one because we never really eat pork chops, they always end up too dry and chewy.

Thursday- Mini Bacon and Cheese Frittatas from Mother on a Mission

Friday-  Baked Chicken Taquitos

Saturday- Birthday Party!

Weekly Dinner Menu: 4/1-4/6

Monday- Ranch Chicken Strips with Mac & Cheese; I am making the chicken strips using a

Tuesday- Tacos

Tacos {Moorethanamommy.wordpress.com}This pic is of Ranch Chicken Tacos, but we are having beef tacos this week. We still include all the same toppings: black beans, cheese, guacamole, lettuce, and sour cream (for the hubby).

Wednesday- BBQ Beer Chicken Sandwiches; I have made this recipe in the past and it is really great for sandwiches (that is what we are having), on a baked potato, or just as is. I agree that the Bone Suckin’ Sauce is the best, but if you don’t have that in your stores, I have also found that any thin BBQ sauce works well.

Thursday- BBQ Chicken Baked Potato; using last night’s leftovers.

Friday-  Greek Spinach and Feta Chicken Pockets; I found this recipe on Chef in Training and it looks delish.
Saturday- Easy Chicken Enchiladas; I was searching Google for an easy chicken enchilada recipe and found this one on Taste of Home. I am using leftover chicken from the Ranch Chicken Taco meat that I made last week.

Weekly Dinner Menu 3/24-3/31

This week, I got my favorite magazine in the mail, Food Network Magazine, and I decided to make some new recipes from it and I am making a couple of “double duty dinners“! Of course, I haven’t had a chance to sit down and look through the entire magazine, but I used the handy-dandy index in the front to find a couple that looked yummy. Maybe while the little one is at his Nana’s house this weekend, mommy will get a chance to relax and look at the stack of magazines I have awaiting my perusal. YAY for weekend trips to Nana’s!

(Side Note: Keep an eye out for the *DDD* which indicates that the recipe is a double duty dinner!)
